Our Hot Sauces and BBQ Sauces are created in a kitchen, not a factory. Just like Grandma, we take extra time and pay careful attention to safely prepare and bottle these sauces. That's why we call them Gourmet Hot Sauces and BBQ Sauces and why they cost a little more. We also never use any artificial preservatives, thickeners or other additives like Xanthum Gum and corn starch. You'll have to shake the bottle well because "the good stuff is on the bottom!"
Our Hot Sauces are fermented for weeks and sometimes months depending on the variety. Just like fine wine and liquors we age the pepper mash. This helps refine and tame the heat. It also adds a nice complexity to the flavor. Each vintage year differs based on seasonal changes and the harvest of our peppers. Most of our hot sauces have 5 to 6 different types of peppers that add to the unique complexity of their flavors.
Our Hot Sauces and BBQ sauces are "fresh from our garden to your kitchen." We try to grow most of our peppers in our own garden. But, if we can't, we only select the freshest varieties from organic growers and local suppliers. All of these use only organic methods and non GMO sourced pepper varieties. All the other ingredients are organically sourced.
